Experts frequently comment that it is almost impossible to make good wine from bad grapes, but it is very easy to make bad wine from good grapes. The quality of the wine depends largely on the grapes used, as well as the facilities where it is produced, production techniques, aging conditions, sophistication of the wine-maker and his capabilities. Sarafin Wines are produced under a special status in Doluca's state-of-art winery in Mürefte. New oak barrels have been imported from France and Sarafin wines age in these barrels in cellars specially constructed for this project. Following production and aging, Sarafin wines are bottled in the same facility and are further aged in their bottles in the same cellars. Sarafin wines are produced under the experienced care of Doluca who has 77 years of winemaking history. All the packaging materials are selected from the best available sources internationally. We believe wine lovers will not only enjoy drinking Sarafin, but also adding Sarafin to their private cellars and collections. They can share the excitement of the two friends who started this project while they wait to see how the wines mature. We also hope that the Sarafin project will contribute greatly to developing wine culture in Turkey by way of providing good wines in a market long hungry for quality. We believe that soon Turkish Cabernet Sauvignons, Merlots, Chardonnays and Sauvignon Blancs will be sought after in world markets and receive the recognition they deserve internationally.

Producing good grapes may be a difficult task, but once a good wine has been made from the grapes all the difficulties are forgotten. The Sarafin project is the most important vineyard investment in Turkey where all grape production is geared towards producing suitable grapes for high quality winemaking. Using meticulous pruning methods to limit production in the Sarafin vineyards means a high concentration of flavor in each grape. The aim of the wine-maker is to translate this into good quality wine using the best available technology. By combining production of grapes and wines in the same project, no effort is spared on either front working for mutual success. New World winemaking is proof of the success of such co-operation and combined effort. Every detailed part of the process, from pruning surplus branches and leaves, picking at the right time of day or night to cold crushing and cold fermentation, is all part of the combined effort aiming for just one thing - production of quality wine!
